Breakfast for Dinner 1st's

Since we don't make big breakfasts very often, on the 1st of each month (starting this month), we will be having breakfast for dinner.

Today's dinner menu: (both recipes are from kraftfoods.com--my version below has a few alterations)
Quick & Easy Egg Casserole: Heat oven to 350. Place bread (6 slices french bread) in 13x9 inch baking pan with cooking spray. Top with 2 lb cooked bulk sausage and 2 1/2 cups sharp cheddar cheese. Beat 6 eggs, 1 cup milk, 1 cup sour cream, 1/4 tsp pepper. Pour over ingredients in pan. Bake 40 to 45 minutes or until casserole is set in center and top is lightly browned.

Cheesy Hash Browns: In a large skillet on medium heat, fry O'brien potatoes for 10+ minutes with butter. Once cooked, add fresh bacon bits and top with grated cheese for about minute, or until melted. So easy!!!

I halved both recipes since I am only cooking for two, but there were also leftovers of the egg casserole, so Jeff had it for breakfast the next morning.
